The Apulian extra virgin olive oil Agricola Paretone is obtained by using top quality olives.

The harvest of our olives begins in the autumn months, which once they reach the right level of ripeness (veraison), are harvested directly from the tree.

The procedure is carried out through mechanical harvesting , barking and shaking , which uses mechanical arms that wrap the branches of the olive tree and strike them without too much force, favoring the fall of the olive tree on the nets and subsequently placed in perforated boxes.

In the oil mill ...

After a few hours of collection, the fruit is transported to a third party mill and processed within 12 hours.

Our olives, once started their transformation, go through various stages of processing.

First of all the defoliation which consists in the elimination of leaves and washing of the olives.

The pressing of the olives follows, an important phase that affects the quality of the extra virgin olive oil.

During this operation the olives are crushed, through a mechanical pressing process, obtaining the paste of the olives which immediately passes it inside the kneading machines. The pasta is subjected to a slow stirring, at a controlled temperature that does not exceed 27 °.

Finally, the oil is extracted , i.e. the separation of the oil from the pomace.

At the end of the last phase, the extracted oil is stored inside stainless steel silos , saturated with inert gas.

Paretone Agricultural Oil is packaged in bottles of: 0.10 L - 0.25 L - 0.75 L and in cans of: 1 L - 3 L - 5 L, according to the needs of the consumer.
